Fish with a fruit sauce, especially tropical fruit, would be a beautiful pairing. The cherry and dried black fruits are lovely, but after a couple days of being open, the raw meat almost takes over and blends with the tannins to create a wine on the edge of being very good or very bad. The black pepper and seared-steak flavours are strong, and will continue to blend and mature, hopefully balancing out the delicate black fruits of this vintage. The tannins are incredibly soft, creating a precarious balance with the acid. The licorice and Spring Mountain mint are bold and provide a lovely counterpoint to the cardamom and clove.  Almost fully mature, this wine will continue to develop complexity for another few years. I had an opportunity to try this wine, along with nine others, at the EPCOT International Food and Wine Festival in Walt Disney World this year during a wine tasting. Dennis Fife was there and explained his methods and his vision for wine, which is to combine the European concepts of terroir with the Napa Valley mini-climates. His wines are big, but complex enough that the size isn&#039;t overwhelming. The medium but soft tannens are well-balanced by the low acidity, giving the wine a fantastic minerality and has it approaching it&#039;s peak.
